The One Christmas Job to Do in October: Make the Gravy Now

Christmas lunch does not go wrong because of skill. It goes wrong because everything wants attention in the same forty minutes: the bird is resting, the potatoes want the oven, the vegetables are boiling over, and the gravy has not been started.

In a professional kitchen that never happens, because the sauce is not made on the day. It is made weeks earlier and frozen. This is the single job worth doing now, in October, and it costs you one quiet afternoon.

Why this is better, not just easier

A gravy made in ten minutes in the roasting tin tastes of ten minutes. A gravy built on hard-roasted wings and a two-hour stock has a depth you cannot rush, because that depth comes from browning and time.

There is a second reason, and on the day it matters more. Your oven and your attention are both fully booked at 1pm. Gravy made in advance needs neither.

Step 1: Roast the wings until they are dark

Chicken or turkey wings in a roasting tin at 220°C, until they are properly dark brown rather than golden. Pale wings make pale gravy. The stuck-on bits in the bottom of the tin are the most valuable thing in the recipe, so do not wash that tin.

Step 2: Build the stock

Tip the wings into a large pan with a halved onion, a carrot, a stick of celery, a bay leaf and a few peppercorns. Deglaze the roasting tin with water or wine, scraping everything loose, and add that too.

Cover with water and keep it at a bare simmer for about two hours. A rolling boil makes it cloudy and muddy; a lazy simmer keeps it clean.

Step 3: Strain and reduce

Strain through a fine mesh sieve, pressing gently. Return the liquid to the heat and reduce it until the flavour concentrates and it coats a spoon lightly.

Hold back on the salt. You will finish the seasoning on Christmas Day, after the roasting juices go in, and those are already salty.

Step 4: Cool it fast, freeze it flat

This is the step most people get wrong, and it is the one that matters for safety as well as quality.

UK guidance is to cool cooked food and get it into the fridge within one to two hours, and never to put hot or warm food into the fridge. Pour the gravy into shallow portions so it loses heat quickly, chill it, then freeze. A freezer should sit at around -18°C.

Frozen food stays safe, but quality fades: meat-based things are best used within two to three months. Gravy made in late October is exactly right for late December.

Step 5: Christmas Day, in five minutes

Move the gravy to the fridge to defrost, not the worktop, and use it within 24 hours of it being fully defrosted. Reheat it thoroughly, pour in the juices from the resting bird, skim the fat from the top, and only then taste and season.

One rule to keep: reheat it once. Food that has been cooked and frozen can be reheated once more after that, not repeatedly.

Quick answers

Can I use the giblets instead of wings?

Yes, and they add good flavour, but wings give more body because of the collagen in the joints. Use both if you have them.

What if I want it thickened now?

You can, with a roux or cornflour, but it is easier to freeze it unthickened and thicken on the day with the fat and flour from the roasting tin. Flour-thickened sauces can separate slightly when frozen; stirring over heat brings them back.

How much do I need?

About 150ml per person for a generous pour, so a litre of finished gravy covers six to seven people.

The second job worth doing early

Salt the bird two or three days ahead and leave it uncovered in the fridge. The skin dries out and crisps far better, and the meat seasons through rather than just on the surface. It costs nothing, it takes two minutes, and like the gravy it moves work away from the day itself.

A thermometer is what turns that bird from a guess into a result.
