Tips from the kitchen
- Slice evenly so they bake at the same speed. A mandoline helps if you have one.
- Choose a firm variety, like Braeburn or Pink Lady. Soft apples collapse.
- Zest the orange before you juice it.
- This dish contains fruit sugars and is not suitable for a strict keto plan.

A fine mist uses a fraction of the oil you would pour, and coats evenly.

Grates hard cheese and takes zest off citrus in seconds. Fine enough that a little goes a long way.
